This flour makes baking gluten-free easy-peasy. It works as a one-to-one measurement for wheat flour in gluten-free baking.

For example, if a recipe calls for one cup of wheat or all-purpose flour, simply swap it for one cup of Bob’s Red Mill 1:1 Gluten-Free Flour instead. It almost always works with some exceptions as noted below.

Bob’s Red Mill 1:1 Gluten-Free Flour is made of a blend of flours (sweet rice flour, whole grain brown rice flour, whole grain sorghum flour), starches (potato starch and tapioca flour), and xanthan gum, all that work in tandem to mimic the taste and texture of gluten in baked goods.

There are other great measure-for-measure flour blends out there, like Pamela’s All-Purpose Flour, Cup 4 Cup multi-purpose flour, King Arthur’s Measure for Measure, Better Batter, GF Jules, and more.

I compel you to try them all to see what works best for you and in specific recipes.

I just happen to like and use Bob’s Red Mill 1:1 Gluten-Free Flour, and it works well for me. I also like that it’s dairy- and corn-free.

Do I need to add xanthan gum to Bob's Red Mill gluten-free flour? ›

There is no Xanthan Gum in this mixture. For most recipes you'd need to add Xanthan Gum to help bind together your batter/dough for the best texture. To know how much Xanthan Gum to add to your recipe, there's a handy chart below and one listed on the bag.

Can you use Bob's Red Mill gluten-free flour to thicken gravy? ›

Our Gluten Free 1-to-1 Baking Flour makes wonderful gravy your family will love.

What is the secret to using gluten-free flour? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

How do I substitute gluten-free flour for all purpose? ›

Substitute by weight, not volume. Moreover, because they are finer, they weigh less than all-purpose flour, so it is a good idea to substitute your blend for the all-purpose by weight, rather than by volume. If the original recipe calls for 260 grams of all-purpose flour, substitute with 260 grams of your blend.

Why can't you use yeast with gluten-free flour? ›

Fresh yeast requires two rises, so it is not ideal for gluten free breads, which require only one rise.

What is the best gluten-free flour to make bread with? ›

What's the best gluten-free flour for baking? Bob's Red Mill gluten-free 1-to-1 baking mix is my favorite gluten-free all-purpose flour blend for baking. It has a mild texture and plenty of "stick" thanks to a blend of sweet rice flour, brown rice flour, and sorghum flour, plus some starches and xanthan gum.

Can you bake with gluten free all purpose flour? ›

When to Swap All-in-One Gluten-Free Flours for Regular Flour. These gluten-free flour blends substitute well in batters that use baking powder and/or baking soda to leaven—such as cookies, muffins, and cakes—along with batters that are wetter in texture, like pancakes and quick breads.

What happens if you don't use xanthan gum with gluten-free flour? ›

Without gluten, many recipes (especially flour-based ones) have trouble holding their ingredients together. This results in dry, crumbly goods that don't hold their shape well. Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity.

What does xanthan gum do to your body? ›

Xanthan gum swells in the intestine, which stimulates the intestine to push stool through. It also seems to slow the absorption of sugar from the digestive tract.

What happens if you eat too much xanthan gum? ›

Xanthan gum is safe when up to 15 grams per day are taken. It can cause some side effects such as intestinal gas (flatulence) and bloating. People who are exposed to xanthan gum powder might experience flu-like symptoms, nose and throat irritation, and lung problems.

Can I make a roux with gluten-free flour? ›

Unlike other gluten-free recipes, you don't need to substitute the wheat flour used in roux with several gluten-free flours. Sweet rice flour, ground from glutinous rice, makes a velvety gluten-free roux and nicely replaces wheat flour measure for measure. Classically roux uses clarified butter as its fat.

What is the best gluten-free flour to thicken sauce? ›

Made from finely milled white rice, rice flour is a great substitute for wheat flour. It works very well as a thickening agent because it prevents liquid separation – it is particularly good for soups, gravies and sauces but can also work for cakes, cookies and crackers.

What is the best gluten-free flour to make gravy? ›

Both Bob's Red Mill 1 to 1, (the blue bag) and Cup4Cup make a great gluten-free gravy. I have tried this recipe with a few other flours and haven't been impressed. So if you can't find either of these 2 brands, I do recommend using sweet white rice flour which comes from short-grain white rice.

How do you bind gluten-free flour? ›

Xanthan Gum

It serves many roles in gluten-free baking. Because gluten-free flours have less protein than wheat flours and are not capable of forming the same network required to stretch and surround starch granules, they need reinforcement. Xanthan gum strengthens these networks and also makes them more elastic.

How do you scoop gluten-free flour? ›

With a soup spoon, spoon the flour from the container into a measuring cup, leveling it off with a knife or spoon. Do not scoop gluten free flours out of the contain with the measuring cup.

Is Bob's Red Mill gluten-free flour heat treated? ›

You can use heat-treated flour in gluten-free baking, but only if the flour is a gluten-free flour. My favorite is Bob's Red Mills 1:1 Gluten-Free flour. So there you have it, your crash course in heat-treated flour. Now go bake some edible cookie dough and eat it by the spoonful without feeling guilty.

Can I use gluten-free flour instead of cake flour? ›

If you are trying to convert a recipe to gluten free that calls for using wheat based cake flour, simply use my gfJules™ All Purpose Gluten Free Flour, which already has a protein and starch structure similar to cake flour, or follow the recipe below: What is this?
