This recipe is so simple to make and that’s why it’s one of my staples. I cook with a lot of chicken in our house so it’s nice to have an easy beef recipe to add into the rotation.

Plus, there’s nothing like a bowl of hot soup on a gloomy winter day!

VEGETABLE BEEF SOUP RECIPE

  • 1 pound chuck roast (or your favorite cut of meat), cut into 1-inch pieces
  • 1 bag frozen mixed vegetables
  • 1 small onion, chopped
  • 1 cup diced celery
  • 1 can diced potatoes
  • 1 cup beef broth
  • 2 cups water
  • 1 can tomato paste
  • 2 tsp seasoned salt
  • Salt and pepper, to taste

HOW TO MAKE HOMEMADE VEGETABLE BEEF SOUP

To get started, chop your meat, onion, and celery.

Pour yourbeef broth and water into the Crockpot then add the tomato paste and seasoned salt. Whisk together.

Add the chopped meat to the liquid.

Add the frozen vegetables, potatoes, onion, and celery.

Mix to combine.

Put the lid on your slow cooker.Cook on LOW for 6-7 hours or HIGH for about 3-4 hours.

Stir again then add salt and pepper to taste.
