I wasn’t planning on posting a recipe for Double Chocolate S’mores Cookies AT ALL, but after I took a picture of one at a restaurant in Florida while I was visiting my friend Jessica, ya’ll went NUTS.
So she and I took it upon ourselves to recreate it and by George we did it! Only took us a couple tries too!
PS- Jessica writes at this blog and I haven’t seen her since Blake was 7 weeks old in Austin. Since then, she got pregnant with twin girls and had these cuties!!

Seriously, how adorable?!
I may have just ovulated.
I got to experience first hand the craziness THAT IS TWINS. They’re so cute but so hard to handle two at a time!! Props to all you twin moms out there!
{I bet you the cosmos are going to play a funny trick on me and magically give me two more babies when I turn 40. Juuuuust you wait.}
ANYWAYS, Jessica and I baked up a S’mores storm and are sharing with you these awesome recipes just in time for Memorial Day.
S’mores + any holiday is always a good thing.
The great thing about these soft and sweet cookies are:
1. They require no flames. Holla!
2. They are delicious.
3. They taste pretty sweet…just like s’mores!
4. We added extra chocolate in because…..we can.
5. You can make them in advance and bring them to your celebrations.
6. They turn out perfectly!

Double Chocolate S’mores Cookies
Chocolate, marshmallows, and graham crackers all packed into soft and chewy Chocolate S'mores Cookies will make you fall in love!

Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter 1 stick, softened
- 3/4 cup butter flavored shortening
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup mallow bits + more for garnish, dehydrated marshmallows*
- 2 sheets graham crackers chopped into small chunks
- 1/2 cup mini chocolate chips
- 1/2 cup semi sweet chocolate chunks

Instructions
Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats and set aside.
Combine the flour, cocoa, baking soda and salt in a medium bowl. Set aside.
In the bowl of a stand mixer, beat the butter, shortening and sugars, until light and fluffy. Add in the egg and vanilla.
Gradually add in the flour mixture on low speed. Stir until dough forms. Then stir in mallow bits, graham crackers and mini chocolate chips by hand.
Create large cookies by scooping 2 scoops of dough together and rolling into a ball. Place onto baking sheet, then top with 2-3 chunks of chocolate and more marshmallows. Gently flatten cookie dough (to form a disk shape) using the bottom of a glass.
Bake 12 minutes and remove from oven. Let cool for 5 minutes before transferring cookies to a wire rack to cool completely.
Note: Cookies will not spread too terribly much at all and will look like they are not done baking. But I promise they are! Once they finish cooling, the cookie and chocolate will become firm and you will have a magically soft and crumbly cookie!
